A new recipe

Been trying new recipes recently and one that I worked out yesterday seems like a keeper:

Ingredients
1 Packet of Tofu which can be cut into patties- which comes salted.

Marinade:
2 tablespoons of olive oil
quarter cup of fresh cilantro
1/2 table spoon fennel seeds
1/2 table spoon cumin seeds
1 green chilli.

Chop up the cilantro and chilli. Add them to a container with the fennel and cumin seeds. Pound the mixture together until it is nice and blended- almost chutney like. Add to this the olive oil and mix well.

Slice the tofu into patties. Pour the marinade onto a flat tray and lay out the tofu patties into the marinade. Make sure both sides get an even deal. Let this marinade for about 30 mins.

Grease the base of a non-stick pan with some more olive oil and heat it up. When ready, fry the patties till golden brown.


The result was pretty delicious especially when served hot. We have to work out the right chutney/sauce combination to go with it. Intuitively, mint chutney or even a tamarind chutney sounds like a good match.
